Classic Basil Pesto

It really seems like with the introduction of Chimichurri, Pesto has fallen to the wayside.

 

Well.. i have to say i think that is a crime against recipes because i absolutely LOVE basil pesto. I prefer it to chimichurri to be honest. It was my introduction to green crap topping your steaks.

 

Put this recipe in your arsenal, because like all my recipes its SUPER easy and it should be a staple on steak night!

Classic Basil Pesto

Basil Pesto is great for any steak, or pork and especially comlements any italian inspired side, but is great with any meal. Pesto can be used for the base of dressings, and sauces as well

Equipment

  • 1 Food Processor You can chop the ingredients as well
  • 1 Souffle A bowl works well too

Ingredients
  

  • 2 cups Fresh Basil Leaves
  • 3 cloves Garlic
  • 1 tbsp Parmesan
  • 1 tbsp Pine Nuts (or Walnuts) I substituted walnuts. Pine nuts are 8-10x more expensive.
  • 8 oz Olive Oil

Instructions
 

  • Add walnuts to processor and chop to a semi-fine texture
  • Add Basil & garlic to the processor and chop to a fine, but not quite smooth texture
  • Transfer pesto matrix to souffle or small bowl
  • Add olive oil to about 1/8"-1/4" below the top of the pesto matix
  • Add Parmesan
  • Stir thoroughly
  • Enjoy with friends and pair with a good wine!
